    Gluten-Free Protein Skillet Cookie

    For the days when you want a cookie as big as your head!  This gluten-free protein skillet cookie is big, yummy, easy to make, and contains 3 servings of fruit!

    Macros for the ENTIRE cookie (including toppings) are: 28p 34c 4f (284kcals)

    This recipe comes from UpliftFit Nutrition client Lauren – @laurenfitfoodie on instagram, and she has a lot of fun recipes there too to check out! I made this recipe twice as I had a happy accident on my first try (aka I screwed up the recipe) but ended up with a fluffier version of this cookie & so I’ve added that variation below too!

    It literally takes up a whole normal sized skillet pan (not a mini-pan)


    1. Preheat oven to 350
    2. mix together the following ingredients:
      • 31 grams (1 scoop) of PEScience protein – any flavor! I used Vanilla here
      • 5 grams (~2tsp) of coconut flour
      • 180grams (1.5c) of unsweetened applesauce
      • 1 egg white (~33grams)
      • Optional: 1 tsp baking powder
      • Optional: 1 tsp vanilla extract
    3. Pour batter into greased skillet
    4. Top with
      • 1 tsp sprinkles
      • 1 tsp (5g) of chocolate chips (I used these)
    5. Bake for 15-20minutes!
    For a fluffier cookie: 
    • use 21grams of coconut flour instead of just 5grams ! This adds a bit to the macros (the cookie ends up being a total of more like 350kcals), but if you have macros to spare and prefer a fluffier/softer cookie, then this variation works well too! And I just cut mine up into eighths to snack on throughout a couple days 🙂
