    Gluten Free Bacon and Egg Breakfast Waffle Sandwich

    This is a super easy meal I put together in about 10minutes!  Calories for the plate are 302-333 (depending on the type of bacon you use – turkey or regular).

     

    Tools needed:
    • I used a mini-waffle maker for the sandwich — this one from Pamcakes (use code UPLIFT for 10% discount)
    • A veggie spiralizer ( I use this one!) for the cucumber

    RECIPE:

    1. For the sandwich:
      1. In a bowl, mix 37grams (1 scoop) of Pamcakes buttermilk mix (use code UPLIFT for 10% discount) with 1/4cup water — this will make the 2 waffles for the “bread”
      2. in a mug, mix together 2 egg whites (about 66grams of liquid egg white) and microwave for 45-60 seconds to make an ‘egg white patty’
      3. prepare 2 slices of nitrate-free or turkey bacon as desired
      4. compile sandwich
    2. take 1 regular cucumber and spiralize it to add to plate
    3. cut up a peach or other fruit to add to plate
