    Cinnamon French Toast Sticks

    Gluten free, and 52kcals per stick.  Recipe makes 16 sticks! And it’s just 7 ingredients. I used the oven to make these, then crisped the edges with the air fryer (optional).  Here is the nutrition compared to regular french toast sticks (serving size of 5 sticks):

    I did use Protein Pancake mix for one version, and then subbed in Protein Powder for another .  Both work, but the one with the protein pancake mix baked just a bit better I think.

    • Macros for the Protein pancake mix version: 3.8p 3.3c 2.5f (52kcals)
    • Macros for the Protein Powder version: 5p 2.9c 2.2f (52kcals)



    1. Preheat oven to 350F, spray a square baking tin (either 8×8 or 9×9) with Pam
    2. Mix all ingredients together in a bowl and pour into baking tin
    3. Bake for 25-30 minutes until done
    4. Slice into 4 squares, then slice 4 strips from each square (16 total sticks)
    5. BONUS Tip (if you have an air fryer):  When you are ready to eat, place strips in air fryer for 4-5 minutes at 350 — this crisps up the edges for a little extra crunch
    6. These do refrigerate well!  Just keep them refrigerated until you’re ready to eat!
