    Chocolate Chip Peanut Butter Protein Blondies and/or Brownies

    This recipe makes a moist, cake-like blondie or brownie (depends on the flavor of protein powder you use).  The final product is gluten-free and just 100 calories per serving (recipe makes 9!).  There are 5 necessary ingredients, with a couple of optional ones (which I think you’ll have on hand).  These can easily be saved in the fridge so you can grab one on-the-go, or dress one up as a dessert.

    Macros per square: 8p 6c 5f (100kcals)

     

     

    Ingredients/Tools needed: 

    1. Peanut Butter (I used All American Peanut Butter Fudge)
      • note: the macros for this peanut butter are slightly different than regular peanut butter but reg. PB or another protein peanut butter should work
    2. Coconut Flour (I used Anthony’s Goods)
    3. Semi-Sweet Chocolate chips (I like enjoy life brand)
    4. Protein Powder (I tested this with Quest Vanilla for the blondie and PES chocolate cupcake for the brownie)
    5. Eggs
    6. (optionals)
      • baking powder
      • sea salt
    7. square baking tin

    Directions: 

    1. Preheat oven to 350F and grease square baking tin
    2. mix together the following ingredients until no lumps are left:
      • 40 grams (2.5TBSP) of peanut butter (may need to melt slightly)
      • 3 eggs
      • 40 grams (~6 TBSP) of coconut flour
      • 40 grams of protein powder (~1/3cup)
      • 30 grams of chocolate chips (2 TBSP)
      • dash of sea salt
      • approx. 1tsp of baking powder (I added 4g)
      • water as needed — I added 6 TBSP of water with both Quest/PES batches
    3. pour into baking tin
    4. Bake for 25-30minutes until done
    5. Cut into 9 squares
