    Birthday Cake Protein Cookies

    6-ingredients, gluten-free! Including sprinkles, cookies = 185kcals if you make 2, or 92kcals if you make 4 smaller cookies 🙂

     

    RECIPE (I made 2 Large cookies, but you could make 4 smaller ones!): 

    1. Preheat oven to 350
    2. mix together the following:
      • 14 grams (2tbsp) Brummel and Brown Yogurt Butter (or any butter)…. I was also able to sub in 2tbsp of Greek yogurt (30g) here as well with success
      • 14 grams of coconut flour (2tbsp)
      • 1 egg
      • 1tsp of almond extract
      • 40grams of EITHER protein powder (I used Quest or PES) or pancake mix (I used Pamcakes) — 40grams is about 1/3cup of either of these
        • optional: add 1-2tbsp of water to the batter (I found I didn’t need extra moisture with the pancake mix, but I did with the protein powders)
    3. Divide batter into 2 portions (or 4) and place on a greased baking sheet
    4. Flatten out batter and shape into large (or small) circles
    5. Measure out 1 tbsp of colorful sprinkles and distribute evenly on top of cookies
    6. Bake for 12-18minutes until done
    7. ENJOY!!!
    8. Keep extras in fridge
