    All American Peanut Butter Blondies

    This recipe makes a fluffy but dense blondie that’s perfect to take as a healthy dessert to a Memorial Day or 4th of July party! The final product is gluten-free and just 93 calories per serving (recipe makes 9!).  There are 6 ingredients, with a couple of optional ones (which I think you’ll have on hand).  These can easily be saved in the fridge so you can grab one on-the-go, or dress one up as a dessert.

    • macros per serving using protein powder: 8p 7c 5f (93kcals)
    • macros per serving using pamcakes protein pancake mix: 6p 8c 4f (93kcals)

    Ingredients/Tools needed: 

    Batter Ingredients:

    • 40 grams (2.5tbsp) Peanut Butter (I used All American Peanut Butter Fudge)
      • note: the macros for this peanut butter are slightly different than regular peanut butter but reg. PB or another protein peanut butter should work
    • 40 grams (~ 6 TBSP) Coconut Flour (I used Anthony’s Goods)
    • 2 TBSP of Red/White/Blue sprinkles
    • 40 grams (1/3cup) Protein Powder (I used Quest Vanilla for the blondie)
      • OR 40 grams Protein Pancake mix (I used Pamcakes ) – use code UPLIFT for 10%discount on Pamcakes 
    • 2 eggs
    • 1 container (5.3oz) 0% Vanilla Light& Fit Greek Yogurt
    • approximately 4TBSP water (enough to make the batter consistency like a thick pudding
      • (optionals)
        • 1 tsp baking powder
        • dash sea salt


    1. Preheat oven to 350F and grease square baking tin
    2. mix together batter ingredients until no lumps are left
    3. pour into baking tin
    4. Bake for 25-30minutes until done
    5. Cut into 9 squares
    6. Keep leftovers refrigerated
    7. I recommend serving with extra All American PB drizzled on top
