    5-Ingredient Microwave Fried Rice

    Macros for the whole recipe: 14p 40c 5f (277kcal)

    RECIPE: 

    1. microwave 1/2cup of minute rice for 60 seconds (I used jasmine rice)
    2. in a separate bowl, microwave 1 cup of cauliflower rice (or blend a regular cauliflower into small pieces if you can’t find cauliflower rice at your store) & 1/2 cup mushrooms for 90seconds
    3. add the rice to the cauliflower bowl
    4. add 1/2 cup of cooked or canned peas & carrots to bowl
    5. whisk up 1 egg
    6. mix egg into bowl with veggie mix
    7. microwave for 60-90seconds
    8. top with your sauce of choice (I used a sriracha ketchup here)
    9. ENJOY!!
