    5-Ingredient Gluten Free Protein Cakes

    Gluten Free Protein Cake! This cake came out fluffy and also dense.  You only need 5 ingredients, and the recipe is really simple!

    The recipe makes 2 cakes.  Macros per cake (includes icing!): 17p 9c 1f (116kcal)

    Ingredients needed: 

    1. 1 5.3oz container of Light&Fit 0% Greek Yogurt, divided in half
    2. Protein powder ( I tested this recipe with both Quest and PES, and both work great!)
    3. Coconut flour ( I use Anthony’s Goods)
    4. Egg White ( I use real eggs, not liquid egg whites)
    5. Baking Powder


    1. Preheat oven to 400F and grease 2 muffin slots of a muffin tin
    2. Mix together the following:
      • 1 egg white
      • 75grams (1/2 container) of Light&Fit Greek Yo (save the other half for icing!)
      • 14grams (2TBSP) coconut flour
      • 20grams (almost 1/4cup) protein powder
      • 1tsp baking powder
    3. Divide batter in half and place half in each muffin slot of tin
    4. Bake for 15-20minutes until top edges are golden brown
    5. Remove from oven
      • Optional: you can cut cakes in half horizontally so there are 2 layers
    6. Use remaining 75grams of greek yogurts to frost the cake layers — you can add some stevia to the yogurt to add sweetness if you’d like!
    ENJOY!!!!! Keep leftovers (if any) refrigerated
